I would go with Javascript - specifically try to pick up one of the modern frameworks (React, Angular, or Vue). You'll be able to land front-end web developer jobs with a decent understanding of JS, HTML, CSS. If you do end up wanting more you can transition to full-stack with NodeJS in the backend or an OOP language like Java/C# for the backend.

If you can build a pc and troubleshoot windows on your own you can probably do fine in a helpdesk role. I watched a 10 minute video about active directory before my first helpdesk interview and I'm sure it helped me land the job. Get familiar with an enterprise ticketing system so you can say you've worked with it, every IT interview will ask which ticketing system you've used in your previous role. Do you know what industry you want to go into? Whenever I interview people I look at what projects they've worked on as they relate to the industry I'm in. Some of them are very interesting and usually spur me to talk about them more with the candidate more so than their resume. If it's an actual interesting project that you're engaged in I can easily tell, and it makes for a much more fulfilling interview.

I don't, I'd like to find a specific niche and master it but my education was very broad and general. I'm really a blank slate right now but I do have an interest in developing some skills. I work at a hospital right now so I've been networking with the people working on data science here, but they don't have a designated data science team so it's a little difficult to break into.

I can only speak for the US, but look into some of the major health systems for data science roles. Hate to not give specifics but I would easily be doxxing myself if I gave more details. Cerner or Epic would also probably hire you right off the bat as well
