Lets say you want to earn 100k before tax every year. That $275 per day.
Richard said there is already enough transactions going on to give 20% for everyone (so the 35 million LIT being staked) so thats 7 Million LIT in fees per year at 0.1 LIT/tx so 70 million transactions.
That means that there are currently 192000 txs/day occuring in the usecase (only 60k on the blockchain, the rest is still supposedly on a centralized version)
Later when they have the oracle service connected to the ecosystem these will garner 0.1 USD/tx.
So to make 275 USD per day your stack needs to be responsible for 2750 txs/day. But your stack is off course only a fraction of the entire pool. Let's say in fact that it will be exactly 1/1000th. (25000 LIT vs 25 Million LIT staked) Then the whole usecase needs to be responsible for 2,750,000 txs/day or 14 times as many as today.
So we'd need 14 times as many customers as today or 230000. Which is almost exactly what they're aiming for by end 2022.
Pretty reasonable.

E.g. 5k customers at start to 15k at EoY averaging 10mil revenue for the year but when they get to 15k customers at EoY they're currently producing 15mil annualized revenue.
