lately I have seen very good projects using PoS (and with a good consensus like Avalanche)

Will this be the end of the PoW shit and its projects ending in misery like ETH?

Staking weight is determined by how much you own so the ones that own the most keep accumulating the most. The goal of the node owners isn't to secure the network but extract value from a pyramid scheme structure.
Destroying what they're mining is also self destructive for anyone capable of an attack on Bitcoin.
If the Chinese dominate it's because they have the excess energy to get paid to secure the financial network. If you can't compete or deal with the security implications it's only reflective of your increasing irrelevance.

Actors are rational and liquid assets are liquid. If there's a better use for staked assets then they will leave the staking mechanism to whatever has higher returns. This makes it easier to manipulate for bad actors.

Your coins are de facto unsecure if they're running on a PoW chain.

The mining landscape has changed a lot over the last 5 years, back in 2015 it was still mostly an enthusiast hobby with "benevolent miners", today it's greedy chinks who mine directly to exchanges with FGPA and won't hesitate to murder your coin before moving to the next one.

It's true but only if the distribution is dogshit (which it is for many coins, especially VC scams).
Coins which got a good initial distribution phase (no/little premine and 3+ years of mining) typically will have a robust model to counteract that.

The probability of Ethereum being taken over by a cartel of validators for example is very small.

I have the best machines and the cheapest power but not as much of it as China. I can fork in a hostile situation and include defenses against China. Most of the volume isn't from China so the defensive fork would dominate.

The distribution may slow the process but a system that tends toward a result could just as well be programmed to reach it. The most bullish buy up the market which pumps the price and expectations of returns from staking. They basically autosell more and more of the staking returns as the price goes lower and lower pushing the price even lower in a feedback loop.
With PoS you get a very large inflation boost which no project so far countered effectively and no eternal record burned in math with the power of a thousand suns.
