Everything went fine with meta mask but on my second wallet; my coinbase wallet I can't seem to change the gas fees when claiming, it's always just a miner fee of $9 give or take and the transaction never goes through.

you can import your coinbase wallet to meta mask fyi. then just re-send the UNI swap with a higher gas fee from your meta mask and it should cancel out the older one.
