Regarding staking, there is this option "infinite unlock". My understanding is that if you activate it, your AKRO stay stacked until you take them out of the pool. Am I right?

No. Your akro will always still staked untill you unstake. With the infinite unlock option you allow them to pool your transactions under one smart contract. So you don’t have to pay a transaction fee (like uniswap) for using the application before a trade. You will only have to pay the gas and transaction fee for the eth network. Mainly advantageous if you plan to stake multiple times.
