The standard I've always heard about was one third goes to cost of food supplies, one third to wages, one third to utilities/rent.

My most cost efficient dish was chicken picata and had a 15% profit margin.

The reason why any of these restaurants in NYC can be profitable at all is because they negotiated leases decades ago and the renters can't raise the price on any of them.

The thing about restaurants is that in addition to be very low profit, it is very hard to find competent managers, and it is very easy to have 1 drunk person leave and hit someone and rape your insurance costs which further drag down your profits.
IMO restaurants are just for people to show off to their friends like 'oh I own a restaurant, lets go there so everyone has to kiss my ass oh yeah and my shitty niece with no experience needs. job so make her a waitress'.
T-1 hour until I'm back at work living the nightmare. At least I make sure no niggers get hired. That's really the only good perk of being a manager.
