That is because like, its there, its working, you can actually use it if you sport a node or whatever. The problem is that what ended up happening is everyone who WOULD be using it has an alternative. Quite a few vendors have a visa card now, and they've covering for the people who would be spending it on their coffee. If they didn't exist then sure, maybe the local coffee shop would set up a lighting payment channel for their customers but there isn't much point with a visa.

current version of lightning is already good
taproot solved centralization problems on layer 2 and channel insufficient funding problem was already solved by routing the tx in smaller batches, so even a channel is poor as fuck, it can still route infinite amounts
current limit it's 0.16btc, which is 2k USD, more then enough for coffee tx
