Optimistic rollups rely on the base chain for security enforcement. You can't just 'flip the back end' because every asset has to exist on the base chain. What you wrote makes no technical sense. Think about it in detail and you will realize what you wrote is impossible - how would such a flip happen, in details?

Posting transaction data elsewhere, rather than on ethereum, may make some sense for eth1 but doesn't for eth2, because eth2 is going to be the most scalable blockchain of all, beating even most centralized DPoS networks by a mile. It's also going to be the most decentralized. Look at token distribution for all those competitors and you will realize they are a centralized joke, relying on them for security is nonsensical.
