Anyways, the idea is that your contract is clear about the demands of your client for example. If there is a discrepancy between the work delivered and the work promised it's not hard to pull a conclusion

Lawyers are fucking expensive. Furthermore, going through the glacial legal system for small claims is a massive fucking pain in the ass. So, you submit your case to Kleros instead to resolve it. Jurors have to stake PNK to even be considered, so anyone without actual knowledge of the field involved in the case is immediately dissuaded from attempting to be a juror on the case. So, in theory, you have semi-qualified laymen looking at the case, who are all incentivized to choose the "right" decision, because they otherwise lose their stake and miss out on the ETH reward.
