Binance was great until the U.S. did a total crypto crackdown - so, Binance (chinese exchange) made a Binance.us site for American customers

Both Binance.us and coinbase work with the government and will rat. I haven't slept in 36 hours and I'm not the best historian right now, you'll need to search for the extent to which coinbase and Binance.US will rat. Certainly, you are aware of the U.S. AML laws, where any transaction of any kind over $10,000 is insta-filed with the IRS; on TOP of AML laws, I do not remember the extent to which these two exchanges will snitch

I seem to have zero issues using the Chinese binance still, but I made my account 3+ years ago. I don't use Binance any more at all, because they could just genocide U.S. users at any time (freezing withdrawals, etc) and there is no recourse

Yes - however, the part where you need to manually input token contract address is superflous - Metamask should pick up and display your LINK automagically. I never needed to add it. The "adding custom token" is for the thousands of obscure, unknown shitcoins that exist (for example, I had to manually add the token contract address for my aLink, which is a token for my AAVE LINK deposit)

In order to send ETH/tokens to an exchange, you have to go to the exchange and somewhere, there will be a "receive" button. This is obviously going to be in a different place for EVERY exchange. When you hit it, it will give you an address to send your ETH/tokens to. You go in metamask, hit send, and enter that address the exchange gave you. If you fuck this up and send funds to the WRONG ADDRESS, those funds are gone forever, there is zero recourse.

The "address of the wallet of the exchange you're sending funds to" can CHANGE. Do not ever think you're going to just "oh I can just send more money to that same address, and it'll show up on the exchange" - you will be genocided, hit "receive" on the exchange every single time

Each exchange has an instruction manual and will tell you where to get to this "receive" button. It's a big world, go slow, don't fuck up. Maybe send $1 worth of funds to an exchange wallet to see if you're doing it correctly. Don't send $5000 USD worth of shit to an exchange when you're new/green
