When do you start considering taking profits?
How do we know that we are at the bottom of a bull run and not close to the peak?

if im up bigly I'll usually sell enough to cover my initial investment plus like 25-50% then just let the rest ride

You take profits whenever you can, if you wait for a specific moment (e.g. 2x) that is normally when you get fucked over.

The only alternative is hodling for a long time, letting it have a bull run and a drop off, then waiting till the bull run after before cashing out.
