I'm confused if LINK is an ERC Token, and ETH is the main protocol, doesn't that mean LINK value will never exceed ethereum due to fat protocol theory?

In reality your argument doesn't make much sense as the collateral to properly execute smartcontracts securely is worth more than the platform its executed on. LINK is block chain agnostic and will facilitate data between all platforms. ETH is going to be for only settlement anyway as it can't scale and Chainlink + Arbitrum solves the issue.
