Anyway to both of you I can say that I am european and have actually already done something that is similar to what you are trying to do. The primary problem will be that your home country wont let you go easily. For me, they still demanded I pay tax to them while being tax resident in another country and there is really nothing I could do about it. This became a massive pain in the ass because both countries wanted me to pay (yes, there is a dtt between them but still)
If you renounce citizenship, there might still be exit taxes to pay.

I both made ties to the new country and cut ties to home country. However, it is still 100% based on the feelings of the tax administration, i.e. if they feel like you might move back or if your new ties are not "permanent" enough, they can just choose to fuck you over.
