Whats the max amount of time an eth transaction Can take if I use the minimum amount of gas possible?

It will stay in the mempool as long as one node Keeps broadcasting it. But remember - nodes only have a finite size for the txpool typically around 5000 slots and lower gas price transactions get dropped after it reaches its max and the whole txpool is dropped when a node resets - so eventually it is likely to be dropped permanently if network load is high
