Yes, but the more it proves to be a long term profitable arbitrage, the more people will pile in to it, which will in turn drive down the profitability as the ratio of arbitragers to pure DEX users goes down.
So the answer is, get in early on arbitraging a DEX and get as much money as you can out of it as quickly as possible. Then, when returns get too low, move on.
