I learned by paying for a membership to a video training site. Not here to shill any in particular, but there are quite a few options out there. Books are typically quite outdated, but for beginner I'd imagine there has to be one that could give you an idea of the basics. Can't recommend anything in particular as I haven't read a poker book in forever.

90%+ of it is statistic variety. I play across multiple different stakes which can increase the variance a bit (if I get unlucky at high stakes). The graph looks a bit more choppy than my actual results because there only is one data point per day.

I've actually had less variance this year than usual. I had much bigger swings last year. I have a pretty large bankroll so losing $10k doesn't really affect my financial well being. If it did then I would be playing lower stakes.
Variance is a part of the job. All pros go on big downswings sooner or later. It can be hard not to let it affect your life/ mood, but you do get used to it to some extent.

And poker is tax free in a lot of countries. In most wealthy countries you end up paying 25%+ tax if you're making $150k/ year.
Also, you're comparing wageslaving in an office to a "job" where you can work whenever you feel like, from anywhere in the world, take vacations whenever you feel like it, there's no dresscode, you don't have a boss to answer to etc. Perhaps you don't value those things and love the wagie life, but not everyone is like you. I went on a 2 month vacation in january/ february. Most wagies can't do that.

Even if your numbers are true (source?) that figure is for all age groups. Very few people average $150k+/ year in their 20s. There's a reason why most succesful wagies don't get wealthy until their mid 30s or later.
Also, poker is tax free in a lot of countries (you can just move if it's taxed in your country). So making $150k/ year from poker is more like making $200k-$300k as a wagie (depending on tax rates in your country).

Agreed. It's not really worth it to get into poker anymore. At least not if you have other good opportunities (it might be worth it if you live in a poor country). If you're (almost) starting from scratch then it could easily take 1.5+ years of studying/ playing before you can make good money at poker. And that's assuming you don't fail (which 95%+ do). If you fail then you've wasted tons of time for basically nothing.
Poker is far from easy money. At least not online.

I've been playing online since 2005 full tilt poker days. What you say is true that games are tougher however, the top players tend to quit after they have made their money. The motivations is just no longer there after some time.

Imo this is what makes it great still. If you expect to make a million dollars, you'll probably fail. But it is a great way to build a serious bankroll (hundred k's) on top a day job or career.
