You are aware that dApps can be built on NKN's network. It's a freemium model, so free for most but paid (cheap) for anyone using a lot of bandwidth. Most scalable blockchain network designed so far. Insanely low latency and high through-put. Worth a look if dApps are your thing. They already have a couple of chat apps running which are working well.

I'm kinda excited about kleros honestly. Someone linked the site when it first went online ages back and I thought it looked super interesting. Was expecting it to generate as much hype as the usual shitcoin though - not much.

The parties would have been working through some kind of intermediary, such as a decentralized "work for hire" marketplace. This marketplace will have terms and conditions which define the parameters of any arbitration disputes.
For example, the terms might say "the contract can only be changed if both parties agree by cryptographically signed email". In that case the parties would have their phone call then follow up with an email exchange to confirm the details.
Jurors would follow the terms defined by the appropriate marketplace. In this case they would not include the phone call as evidence, but rule based on the mutually agreed written terms.
