I have no idea about actual, bricks and mortar businesses, only tech ideas like everyone else:

UberEats meets Goodreads for boutique wine. Everyone understands the Ubereats part of it, it's basically a bunch of guys who drive around dropping off bottles of wine, the key is the Goodreads part - there's a recommendation engine that builds profiles based on your previous wine purchases, but also allows you to under in details from new wines you bought "forest floor flavors" now it starts narrowing down the Shirazes and Merlots it recommends you.
The key here is that you'll never pick a wine you don't like. Keeps the punters coming back.

I suppose the same concept could be extended to Gin, to flavored Vodkas, but I think wine is a far larger market.

unrelated idea: what about like a little sensor that detects whenever you nut, and it is connected by USB to your computer and has a browser extension, so whatever videos you were looking at for the last 10 minutes get logged into 'good nut'?

You know how everyone is using this gay fake VHS effect that makes everything blue?
What if you had a few wracks in your warehouse of actual S-VHS decks hooked up to an online server, and in real time people can upload their video and it gets converted into 525p analog and then sent back to them via the cloud?
No two renderings would ever look the same since it's analog. You would need at least one technician prettymuch working every day to replace the worn out tapes, check the decks are still operating fine (but since glitches are part of the aesthetic, you can have a lot of give).
I don't think it would even require that much processing power, you'd need just one machine to hold the queue (a h264 encoder and decoder... which everyone's tablet has, and a composite color output and input) and probably rent all the cloud shit to act as a buffer

I haven't done it myself, but I'm pretty sure there's ways you could even have HD analog by splitting each frame into 5 standard-def frames and then reattaching the scanlines... sort of like how interlaced used to work.

I think the nicheness actually helps you. I can think of many types of people who would use such a service (bands with retro aesthetic music, fashion designers, instagramers). Marketing it as a 'premium' service and emphasizing "this is *not* a filter" would be key. For example, many musicians still insist on mastering to tape, even if it was recorded digitally; vampire weekend recorded the drums on one of their albums to tape even though everything else was recorded and mixed digitally, John Frusciante and Jack White insisted on end-to-end analog set ups for many years, the later even insisted on having one of his interviews with Conan O'Brien done with old tube cameras if I remember correctly.

I'm also not sure if it's as simple to implement as it seems in my head, I'm sure you could automate the VCR functions and write a short script in python to synch them up with the encoder/decoder in the workstation that way there's no human operation neccesary.
