Because everyone (including you) has been brainwashed to believe that we need university education and a 100K job to be happy. Technically we are just like zebras roaming free in Sahara. We can live a simple life, but urbanisation killed it. Its our technological arrogance and socioeconomical conditioning keep us away from that life you are talking about.

Read on permaculture / homesteading. Get a land with some water connection/source and sunshine. Everything else will fall in place.
