I hold link, but this is unrealistic. There hasn't been a single occurrence of a crypto function going live for any coin that has caused a massive spike in use; rather, there's always been a shock at how little use there is initially.
It will moon eventually, but it's completely naive to expect this to happen like a "spike" as opposed to like an ordinary bubble. You need time to build the ecosystem.

What we normally think of a demand increase will occur on exchanges as the supply decreases, but there will also be a huge demand for tokens so that companies can reduce costs by using the chainlink network. But, don't the first wave of companies already have their tokens? Yeah I know about the whole supply drying up tokenomics part, but I'm still skeptical about everything being in position. Think about how much collateral is needed for different industries using the network. When derivatives go live this year, what % of the derivatives market (12+ trillion) will run through the link network? The mcap of the staked link will need to match it. That sort of thing will happen relatively overnight as banks have been preparing for it for years. Remember, we're talking just derivatives here. ISO 20022 won't be required for EVERY single SWIFT transaction until 2021.

As for gradual growth, yes: the growth from 1k to 10k and beyond will likely be gradual, with more pre-planed spikes as the remaining tokens are distributed to the second and third waves of companies joining the network.
