fungible money means that every unit off account is treated the same.
bitcoin for example is not fungible, because every transaction is visible on the blockchain publictly. so in theory you could buy a bitcoin from a dark web vendor, which could look fishy to authorities.

Every Bitcoin has a unique I'd number, therefore every Bitcoin is different. Monero doesn't have that problem. Every money is the same. Law enforcement can track how each Bitcoin has moved from person A to person B. They can't do that with Monero. Gold is fungible - every ounce of gold is the same and you cannot tell who was the prior owner of an ounce of gold.
