I got a small business idea that I know most of you won't be too familiar with but I thought I'd run it by you.

I got a master's degree in theater at one of the top 10 universities for that master. I teach theater during the school year and make enough money to be comfortable and slowly (VERY slowly) pay off my incredible amount of student debt (~$150,000). I know, I know.

Now, as a teacher, there are 3 months in which I do almost nothing. I want to open a theater company for kids and have 2-3 week workshops teaching theater and singing, while my wife teaches dance. What should I charge? Should I make it a non-profit? What kinds of spaces should I be renting (doesn't need to have a real stage, most theater classes are taught in just empty rooms.)

You haven't given us the slightest clue as to how we should advise you. We can't read your mind and see what sort of competition you have (to base fees off of) nor what your costs would be as you've provided nothing to base it off.

Shill your kids’ parents during parent teacher conferences and put up posters during performances
Charge at your desired hourly rate + costs to calculate breakeven cost at 50% capacity

Frilly NYO actor failure here anon. Good luck. Charge as little as possible. You want to encourage this, not try to be a jew and make bank off it (if you charge too much off the bat, you wont).
