if you keep all your coins all in a ledger but one day it breaks and the manufacturer stops making them does that mean your coins are gone forever?

They are designed with military specs. Just keep it in a safe place and don't toy with it. Don't drink soda, beer, water etc when you use it.

OP, the coins are not on the ledger, the coins are on the blockchain!...All HW do is hold the seed. Just keep your 24 words in a safe space

if manufacturer stops producing ledger your seed phrases are useless. That said just bought one and locked all funds inside (except some on binance to swing for fun), it's extremely comfy

How do you get the real private keys/wallet.dat from your ledger?

you dont, the private key stays in the ledger and is inaccessible

when setting up a new ledger you'll be required to create a login pin and write down a 24-words recovery seed

once you "log in" to mew/LedgerLive through a ledger you'll be required to press a button on the device manually to confirm transactions, essentially substituting the private key with manual trigger
