What exchanges do you use to buy ETH or BTC and convert to lesser coins like HOT or LINK? I was going through coinbase to binance, but coinbase is gay and randomly put a 17 day hold on my ability to send to binance, so I'm looking for a better spot. Is cex any good?

I guess I should just ask, being pretty new to crypto, do all exchanges take a few days to go through? I was under the impression that I could just buy and start trading right away.
