Because Link's supply and performance are dependent ONLY on the network.
ETH on the other hand is dependent on a vast multitude of external influences.

Besides, you want ETH, other people want BTC, others want a USD-based stablecoin, etc.

There's a reason tokens exist in the first place, and a separate decentralized network without mining is the ideal use case for that.
