It could go above $1 but there is incentive to keep the price low and stable. Nobody will want to stake a volatile token. If you stake 1k LINK today but next week the price explodes your LINK is now covering more value than it needs to. Plus if your data is bad your penalty is a larger loss if the price rises from the time you stake.
ChainLink will be used a ton in the future but the token itself is not meant to be an investment like other cryptos.

Lol, the price has to be really high for Link's total supply of 1 billion to be able to guarantee all contracts.

And as we all know, nowhere near the total supply of 1 billion will actually be used for actual guarantee staking, so the price will have to be REALLY really high.
