I believe all this, but my only question is - why are we the only ones who can put the pieces together? No matter how many NDA's are in place, there will always be leaks and always be someone buying based on inside information, but in this case the token price is still thirty something cents.

In a way this is the answer.
When a smartcontract needs off-chain data, it won't have the API provider as part of its own code, but will instead be calling another smartcontract created for the purpose of retrieving the kind of data you want.

So an oracle works by having on chain contracts which retrieve data and having the off chain nodes doing the work to give back the data to the on chain contracts.

I'm very sure that specific API's will be specified in the service agreements.
