Also you understand that you can set up private blockchains as well that operate much cheaper than public ones but offer, for all intents and purposes, the same level of security as long as they are operated by trusted entities?

There's really no reason why a wine producer, for instance, would pay more than they're already paying just to move to a public blockchain when a private option is cheaper.

Why would this be true? A public ledger requires orders of magnitudes more storage since full copies of the blockchain need to be held by a large amount of people. In a private system you only need one plus backups. So public ledger use more electricity, need more bandwidth, and need substantially more storage space, all of which add up to costs that get shifted onto the user of the blockchain.

Can you name a single blockchain in existence today that allows me to write data for cheaper than an Amazon, Microsoft, IBM, or other cloud service would?
