is mining really profitable? thinking about buying 3 GTX 1060 with plans to expand. i dont mind expending some savings as long as this more than pays for the power and hardware

Not worth it. You'll be doing a service to your electricity co., nvidia stocks, but for you will just incur a loss. A 3 GTX mining setup will get you in $3000 debt. The only profitable way to mine is by having atleast 4 to 5 - 6 graphics card setups

Why would twice as many cards be more profitable?

this.
But today even a 6 card rig isnt enough, mining difficulty is rising all the time with new hardware coming out every few months, so if you cant cover your initial costs after 1 year, dont do it. Only reason to actually do it is if you want to support the etwork for some retarded reason, but if you want to speculate on coins- just buy them, its more instant and less risky.
