IDK about Germany, but in France, there are a whole lot of rules governing what you can do with those big old chateaus. Like, if you want to restore one, it has to be done with the same materials and methods, you can't modify anything, everything consequently costs a gorillion dollars and the end result is you live in a drafty old shack with hardly any outlets or climate control, no insulation, single-pane windows, etc.
