I'm not smart but I put a ton of money into link because to me self executing contracts that trigger when real world events happen sound really cool. Although, is this even possible? Basically, has this been tested and is there anyplace I can go read about working successfully where a smart contract pulled data from the outside world using onto the distributed ledger and executed the concractual agreement? or is ChainLink still just a theory and they're trying to pull off solving the biggest problem the world has ever faced? Help I'm in deep here.

No. Ropsten is the first time someone did it.
The only thing to read is the Chainlink whitepaper.

It has happened before, it happens many times everyday, only the oracles are centralised.

Yes, and that's the entire point. Centralized oracles don't solve any real world problem, you still have to trust someone, there is little to no reason to use a smart-contract with centralized oracles over a regular contract.

Decentralized oracles on the other hand make the entire process trustless and removes the need of a third party.
