Accounting and finance undergrad from average (gaining traction) college

You should be ok, double trips. You have three internships, and if you have good references from them your employer shouldn't even worry about your GPA.

As a hiring manager (MSO on the tech side, not finance, but the principles are the same,) I only concern myself with an applicant's GPA if, and ONLY if, they don't have any relevant work experience. If your CV has good work, letters of recommendation, and you graduated from a real school (not University of Phoenix or other joke programs,) you should be set.

Even with my bad GPA I feel like I understand the subject matter or could pick it up very quickly as I have during my internships. Ive just never been good at memorizing it all at once for exams

Well you already have experiences from internships assuming you get a letter of rec.

Did you join any clubs or do anything unique in college that would take up your time? Even a part time job is fine too. A lot of employers like to see well rounded people even if they have a less than ideal GPA than a bookworm who rarely interacts with people or doesn't do anything else.

I have a few unique things, did a few entrepreneurship business idea competitions and placed pretty well. Can handle myself socially pretty well.

Im just wondering if I wanted to do something as competitive as IB would it be possible with a poor GPA.
If not, are there other high pay,fast growth type jobs in finance or accounting where I could learn/do alot quickly while im young?

Did you graduate without needing special dispensation from your Dean? Yes? Then it's good enough. The school is more important, and your experience is more important than that. I'd take a guy with a 2.5 from a mid-tiered school like Clemson over a guy with a 4.0 from something like DeVry or Phoenix. Hell, I'd take a guy with a 2.5 from Clemson with several good references and a (somewhat) proven work history over a guy with a higher GPA and no work history from the same school.

What school and program did you graduate from, if I may ask?
