People don't understand that AI is not linear in development, nor does it follow a Moore's Law type of trend. It becomes very expensive to squeeze out progress from AI after its initial development, both because you need a lot of very accurate data and because you need an inordinate amount of physical resources to provide the power, cooling, etc. to the hardware itself. At a point, it just becomes diminishing returns and you're pouring billions into development for a very marginal increase, if any, to the performance of something that is just regurgitating the top search engine results.

AI can write essays because essays follow an incredibly simple and consistent framework, and there is no need to employ variety in your delivery of information. These forms of content also do not require heavy use of the tokenization that something like programming does. Tokenization is essentially the amount of things the AI needs to keep track of in order to accurately deliver its next output. As an example, AI's for programming can do simple stuff with a few variables because there is relatively little complexity to its logical structure. However, anyone who has tried using them extensively will tell you that once the scope of the task extends even marginally into "novel" territory, it breaks down very fast. Granted, you can argue that you could just make your whole program by building it from simple and isolated functions, but if you can pull that off then you're just programming with a fancy autocompleter (which is what I do).
