So I was wondering if I move to another country and live on my crypto gains, selling some crypto on a US exchange and then transferring dollars to a foreign bank or something, would I owe taxes in that country or no? All my income would be earned in the US, right?

It depends on the country but like the other anon said, the US demands and requires you to report any amount of money over $10k in foreign accounts. "A United States person that has a financial interest in or signature authority over foreign financial accounts must file an FBAR if the aggregate value of the foreign financial accounts exceeds $10,000 at any time during the calendar year."
They will find out if you don't report. Big fines. What you should do instead is create a trust and get a lawyer to advise you. it's way too complicated to discuss on 4chan and you didn't list the country either, so it varies widely. any western country is going to try to get your gains either way, so try to protect them to the best of your ability and it is possible lawfully.

You will owe tax on anything you had as a mainland resident, but after that and the 6 month residency, you can become a PR resident.
