Markov chains can do that. Modern LLMs are interesting because of self attention which causes them to weight parts of the earlier text when making predictions. That was the revolutionary discovery in 2018 (originally just meant for text translation) that made them so capable.
They're able to "reason" to some degree by thinking out loud so the attention picks up on the earlier things it wrote.
