If a coin goes up compared to eth then the ratio in the pool will reflect that and you'll actually get more eth back if you swap back or withdraw your pool tokens.

The fully drying out scenario can only happen if the token price drops drastically compared to ETH, at some point, when the token price is substantially 0, you won't be able to swap it back into eth as all eth is gone from the pool and a lot of the tokens are left in the pool. However, holding the same token outside of uniswap will be the same, i.e. the token price is 0, you won't get any eth for it on a centralised exchange either.

The supply will never dry out because when the token goes up people will swap eth for token on uniswap, that changes the ratio in favour of the token, once that ratio is better than outside of uniswap (effectively providing a better price for eth) arbitrageuers will buy the token outside on exchanges (or wherever) and swap it favourably for eth, supplying more tokens to uniswap and adjusting the ratio back to reflect the outside world.
