The accurate answer is - any amount.
However for partial proof of stake (at the beginning), 1000 ETH are expected to be enough to turn a 8-12% profit, but the only people staking that much will be Vitalik and co.

At full proof of stake (late 2018), a full node will cost 32 ETH and will be profitable.
You will be able to pool contracts both in partial and full proof of stake (no need to have enough to run full node).
