I used to combine my treasure and antique hunting/digging expeditions with scrap metal collecting back around 2010-2012 when metals prices were really high, I'd park my truck near old creeks and ravines people used to dump their crap in and besides antique bottles and the occasional valuable old porcelain sign etc. I'd haul out the nonferrous and clean rebar, cast iron and steel, probably averaged $15-18/hr just from the scrap but sometimes as much as $60/hr, good exercise and a productive use for my mornings before packing up and shipping out my e-commerce orders in the afternoon. I came across all sorts of nice old iron and steel, but never really thought about saving the good bar/rod iron or 3' diameter sawmill blades (I know I shoulda kept those). Wrought iron for sure. If you cant ID it immediately, just break a piece off and look for wood-like fibers at the break point. If you find any bar-stock or even thick sheets of iron those could be a good find. Rebar is useful, but usually for general nig-rigging projects. High-carbon steel is also a good find, but that stuff is usually slurped up at all points of its use. Saw blades are another good find, especially the solid ones (with no cut-outs for stability and sawdust removal). I mostly work with random shit i find at my local dam, but wrought iron is Gold to blacksmiths.

A barely used Garrett Ace 250 metal detector for $20 (over $200 plus shipping new), some cheapie scrap gold/silver and a box full of nice antiques and books from the last estate sale I went to. I've been doing some hardcore research on forgotten old parks, resorts and picnic grounds used 100+ years ago and then comparing the current satellite images with historical aerial photographs from the 1930s and LIDAR scans and have found an overgrown forgotten part of one such location which between the 1880s-prohibition was once among the most popular picnic and beer garden resorts in the state. The old paths are still visible in LIDAR images and the terrain hasn't been disturbed since it closed down in 1920, it just reverted to woodland. I already had a detector, but with the spare I can bring my close friend and trusty hunting partner along to help locate the old coin and relic hotspots. I can't think of anywhere better to hunt for pre-33 gold and Barber/Seated silvers.

The best method is to lock it in a vice and bend it or hit it jard enough to snap. Bolt cutters can be used, but it'll make the grain-identification harder due to the clean cut.
The pieces in your pic appear to be wrought iron, due to their wood-like rust/erosion structure. Almost anything made before the early 1900's will be primarily wrought iron, with exception to cutting and drilling tools (axe edges, drill-bit's cutting edge, etc).

Chopped-down railroad track anvils with their hard steel top surface are really quite nice and ought to be relatively cheap and easy to find, i have a few of those too and prefer them for most basic jobs requiring an anvil.
