The inflation (overall) went down so drastically only because of one particular factor and that is electricity. Since electricity was monstrously expensive last year and the prices this summer have been below the historic average, inflation overall went down drastically.
But electricity is starting to go back up, gas/oil up massively, service and recreation massively up... and so on.
The rate hikes haven't contributed SQUAT to the downturn of inflation. It has more to do with the comparison effect and "base" effects as the central banks like to call it. Since inflation was high last year, the growth of inflation this year will of course seem mild by comparison (even though realistically we have 20-30% inflation over two years).

0dte is not my thing. In EU there are only a few good brokers for that if any. I think it's way more used in the US. I don't want to fight against time. If I want higher leverage I rather use something like barriers. Can suck sometimes too if you get fucked right on the pip (which I had sometimes) but you can hold as long as you want and time is not your enemy.
