Maybe try marketing more to locals, deliveries are king. I don't know a single person who can cook. They all eat out. The ones that claim to cook are not actually cooking but reheating pre-steamed rice. I know people who cannot crack an egg let alone fry.
Also, try cut your produce costs down. There's a farmer somewhere with a bare arse just like you. You just need to hook up with him in a non-gay and solely financial way.

We are high end and the prices are going up substantially. We were niche before but most of our clients are eyeing shotguns it seems as the banks collapse and economy becomes rancid.

Seriously though, if you're struggling with bad employees/customers. Help the local old, sick and homeless in a way that they will talk about. No-one fucks with memaws favorites.
Maybe discounts or something. Or set up a program were a % of purchases goes to a hobos next meal.
And yeah, do cheaper menus. Luxuries are the first to go. I make my own pizzas as an example. And now i make extras sometimes so no-one i know pays out the ass for cheesy tomato bread. Same goes for chocolate cake but that's for frens only.
