You don't have to deal with the repercussions of them being derelict in the responsibilities that you've forced on them. The inattentive burger flipper poisons someone, now you have to pay taxes to support the FDA or someone you employ has to pay extra for the burger they purchase, in order for the company to cover food safety training, so now it's more money out of your pocket another way (and probably more because there are middlemen).
