The theory is that one day out of nowhere suddenly bitcoin will skyrocket in value, but is this actually how it will occur?

This happens with all fiat eventually. It's not an out of nowhere scenario. It happens as a literal result of what is occuring now. You can track this with every failed currency (all of them ever in the history of money) as well as current existing currencies.
