Having a high score gives you more wiggle room to do things that might drop your score. Signing up for 4 cards with $200 bonuses is an easy way to get free money, but if you do that with a score of 725, you might drop under 700. If you do it with a score of 810, a drop to 785 doesn't make a difference.

Should I be keeping a rolling balance or just have 0% utilization? I see that 1-5% is best for goyscore, I just started building credit only 5 statements but I just calculated my usage to be 7%. I pay it all immediately. Should I just keep it at 0, to get my total utilization down, or try to utilize 1% every month to average it down?

utilization isn't just not carrying a balance. Zero balance doesn't mean 0% utilization. But, just the same, 1-5% utilizations is overkill. Under 20-25% and you shouldn't worry. DEFINITELY don't carry a balance though.

If you're young and aren't trying to make any big purchases (house, car, etc) in the next year you can open 3-5 credit cards all within two weeks and they'll, in total, only ding your credit once, very minorly, and that ding will be gone in like 3-6 months. More lines will weight your total age of accounts more heavily (meaning that a new account, or closing an older one) won't ding you as hard and the total amount of your available credit will lower your utilization rate.

Or if you have more time and less money you can just open one new sign-on-bonus cashback card at a time (like "spend $1000 in your first three months, get $150 back") ple on all your expenses to that one, and open a new one every time you meet the spending-quota. You'll get a soft-inquiry for each new card (because you only get a two-week window per inquiry to apply to multiple lines of credit while dinging only once) but in the long run you'll be gucci and if you don't need 760+ credit ASAP it'll have caught up before it matters.
