everything is given value by humans. however certain things have properties that make them better as money.

bitcoin is money.
gold is money.
fiat is not money

Bitcoin is the first and best fully synthetic actually scarce commodity. This and other properties make it the best money currently in existence. The price appreciation of bitcoin is just what you normally see when a new commodity, asset, technology is introduced into the market.

If you could see the "chart" for google, amazon or ford or oil companies BEFORE they went public it would probably look like crazy volatility and boom and crashes just like bitcoin.

bitcoin however is public and open so we are actually able to witness in real time the asset go from zero to infinity. Once bitcoin become the world's reserve asset 21M bitcoins are worth all the wealth in the world.

you may say I am a dreamer but I am not the only one.

I mean, in the 90's certain beanie babies were valuable because they were rare. Now, you can buy a wheelbarrow full of beanie babies for a dollar. Just because some shit is scarce doesn't mean it's valuable. Bitcoin is the beanie babies of the 2000's.
