Almost any chain is good as long as it's barely used.
Let's assume that 1 to 10 trades will happen every second*, sometimes peaking to 1k.
What would happen to the order execution time? What will happen to the transaction fees? Will peaks be processed with no hiccups, or will those orders get stuck in a limbo where you can neither cancel/amend them nor speed them up, as was the case with some crypto transactions I had?

A single-server solution can easily handle this and more, keeping transaction cost constant. Unless a dex can be as good as this, there'll be room for cex'es.
