Depending on the price of ingredients, I think you can get a larger profit margin on sushi than pizza, because the market for sushi is willing to pay more, at least in my country/city.

Sushi however poses a greater risk from lawsuits. You can lose some money from dissatisfied customers in small claims courts from getting the shits from infected raw fish. Or you can get courtraped bad from a paralyzed or dead customers due to clostridium botulinum infection.

I'd go with pizza. Less chance to fuck up a recipe, more comfortable sanitation requirements and less risk.

that's what i thought too, and the startup equipment and space required i much lower. but everyone always wants pizza, sushi is more of a 'mood' for a lot of people, esp in colder months, at least for outdoor traffic. im leaning toward pizza too, just because it's always agreeable and I can grow my own tomatoes peppers etc if I lease some land to cut costs, and possibly sell these at farmers markets along witj value adds like canned sauce etc right beside my pizza for a kinda cool attraction

but boy do i love sushi, and it sounds like a neater, cleaner set up in a sense. a lot of the prep can be done in the primary kitchen before leaving (premade rolls for the day, rice all cooked, etc)
as far as lawsuit risk, i'd think liability ins would cover that. at any rate, the point is was more why tf did i get banned.
