Trad bolognese is mint. Do it right. Do it long and slow. Slice carrots and celery thinly. Dice onion. Olive oil in pan bring to medium. I melt unsalted butter then put the onions in. Wait until they become translucent. Then celery and carrots go in. I'll wait till they soften up a bit. Usually I do 2 lbs ground beef. 1 lb ground pork. Brown the meats. At this point I'll drain fat but leave some in. I also salt and pepper the meat itself. Next comes sauvignon blanc in to the pan. Lower the heat until and simmers and wait till the alcohol has cooked off. You have a choice at this point. You can either add milk in to the dish now and simmer with the meat or wait later and add it to the sauce. Both have worked for me in the past. Next comes the sauce. You want SAN MARZANO canned tomatoes they are excellent. I also add crushed tomatoes too for more of a saucy sauce. How many cans you use depends on the size of pot you're using. I have a big one and use lots for multiple meals. Next place your meat and veg melange into the tomato sauce. Here's the patient part. Bring the pot to a simmer and you're going to reduce this thing for like 4 hours. Check and stir occasionally so the sauce doesn't burn. Also check for taste, salt and pepper accordingly. In the last 5 minutes and in a basil leaf and remove once done cooking.

Trad bolognese has no garlic or other seasonings besides salt and pepper. But it's cooking so adjust to your own tastes. I'll then portion the dish and freeze for meals later. Your house will smell amazing.
