Can companies find out about your real past work history, even if you don't put it on your resume?

I walked out of a previous job because the boss was a complete lunatic, and ever since then I've found it infinitely harder to land a job. It's almost like I've been put on some kind of blacklist that's shared between businesses.

in my country, austria, you have to give your employer, once you are hired, a paper from your health insurance, where all your former employers and the dates of your entries and exits into jobs are listed. if they check that with the resume you applied with you are fucked.

Heard this too many times so I don't think it's a myth. Of course not every shit company does this, so depending on how big the company you worked for is, this might have happened or not.
