I find it ridiculous that the concept of decentralization is somehow important for NFTs when the digital asset itself sits on a centralized server somewhere and were it to go down you would be left holding a series of letters/numbers/whatever with no meaning to anyone, except to prove that you own these letters/numbers.

That's why NFTs can be used to represent digital assets which isn't centralized and held in a decentralized public ledger called the blockchain that is ultimately owned by no one. Temper proof and free of control.

Concept is simple and elegant but possibilities are endless.
People are already mindlessly spending billions on centralized digital assets not owned by them eg gaming goods and can be taken away by a simple user agreement so why not make it decentralized so it's less corruptible?

Maybe I just don't get it but even if I have the token that proves my ownership, the asset itself isn't there. It's on a server. say I buy a NFT painting, I can't see it if the server that displays these things doesn't have it, right? It's not in the token (unless those pixel art things I saw actually are in the token itself)

Yes, the asset isn't stored on the NFT but the NFT is used to authenticate the ownership of the asset so even if you have access to the asset eg. a digital painting stored on your own server or any other server but don't own the NFT to it, people looking at the asset in question would know that you aren't the true owner if they know that the ownership is tied to an NFT.

That solves a lot of issues with direct digital asset safe keeping and storage, the asset can even be publicly displayed for anyone to copy or download without a watermark or digital signature, they just have to look it up on the blockchain and that is something that cannot be tempered with.

Let's say a server for these assets goes down and the company ceases operation. the NFTs would still be around but how would anyone know what my token represents? (this is a very naive and simple example of course, internet would have copies of everything)

That is a good question, the type of data is not only limited to ownership, any type of data created by the creator can be inserted within the token itself of course limited to the token standards (ERC-1155/ERC-721)

So upon creation of the NFT, the creator has to specify in detail what token represents to fully tokenized another asset without any loss of information on their part.

The creator of the NFT also has to specify the true authority of the NFT on which chain so the claim cannot be stolen.

Most of these are facilitated through the use of smart contracts.

It's similar to how ERC20 tokens are created but people still can differentiate between the different tokens based on their naming convention. It's hard to lay claim on a particular project once it's been made known.
