I think UNI (token) is useless for the same reasons.
Also you conflating the token with the exchange (as everyone seems to with these tokens), they are not one and the same.

You can use these exchanges totally without ever touching their tokens, and as it stands, you receive almost no benefit for holding them as more are printed.

Also using the 1/4th of the market cap doesn't work, there have been plenty of shitty uniswap clones made in the past few months that have a far far lower market cap.

Curious to hear your thoughts about why CAKE would go down to $1.

My Bull case:
1. Due to ETH high gas fees, many tokens are moving over to Binance Smart Chain, and pancakeswap is the largest DEX for that. As I feel that there will be more growth and widespread migration/adoption into BSC itself, it is worthwhile to invest into CAKE.

2. The total daily volume of CAKE already beat UNI, and the total value locked is similar. CAKE still has 5x less market cap than UNI, and it is reasonable to compare them, as CAKE is the largest BSC DEX, while UNI is the largest ERC DEX.

3. CAKE also has more features than UNI, with lottery and staking pools. They are also going to add in NFTs and possibly other features as well. I am invested into CAKE's growth as an exchange.

4. CAKE is backed by Binance CZ and is the "official" binance DEX, so no chance of rugpull or CZ letting the thing die.

5. The staking rewards right now are absolutely crazy with 400% APY on pancakebunny, so I earn more CAKE just by holding it, and I believe it could do at least another 5x from here, so i get a 5x and then another 400%? sounds great. Although the APY would likely go down after widespread adoption, I'm holding it to ride the wave.

6. Seeing the sentiment on /biz/ shows that many of the pajeet rugpull scams have now moved on to BSC, and everyone seems to be making tokens on BSC now. So just ride the wave, sell shovels when theres a gold rush.

This also does not account for what happens if BTC pumps to 200k, bnb will pump massively and then CAKE will follow along, so if that happens, CAKE can easily hit 200 EOY.

The inflationary aspect of CAKE would not be such a huge issue compared to the demand for it (for staking, for new investors going into BSC).
